Both are hardwoods and have a minimum shear strength of 1,400 lbf/sqin but the Poplar are a little more flexible. The biggest difference is in color. When compared to the stall bar uprights and back plates (which are made form Baltic Birch), the Beech rungs are darker than the uprights but very consistent in color. The Poplar rungs are mostly lighter in color (similar to the Baltic Birch) but do have some very dark colors and streaks mixed in.
